On the table

The cheese, the machine, and everything to go with it

½ wheel or a quarter, set on the machine: everyone scrapes as they please, throughout the meal.

Savoyard and Swiss: large raclette machines, as in mountain restaurants.

A fine cheese: made from French milk, aged 8 weeks, with no lysozyme or colouring.

200 g of charcuterie in five varieties, potatoes and the cheese melting over them.

This is not a raclette with individual pans: a single wheel in the middle of the table, which everyone scrapes in turn. That is why people come back for it as a group.
