Open since 1902, Les Variétés belongs to the small circle of French brasseries with more than a century of history. Eve and Romain have run the house with their team since 2022, while chef Théo has led the kitchen since 2023.

Where the name comes from

It comes from across the street. Les Variétés was a theatre, right on the other side of the boulevard. It became a cinema, closed about ten years ago, and today it is a supermarket. The brasserie has not moved: it still carries the name of the hall it used to face.

A brasserie is not a restaurant

A restaurant expects you at a set time. A brasserie takes you as you come. The quality of the food matters above all, but the dishes stay simple and timeless — and the service is quick, because many people pass through in a hurry: before a meeting, on a lunch break, to sign a contract. Others come for the opposite: a date, revising for an exam, telling the barman about a bad day, or simply watching the city go by with a drink on the terrace. What makes the difference is the waiters. Real waiters, who listen, with a sense of people — able to give advice to a student far from home, without judging. And one simple promise: there is always something hot to eat. Not the whole menu, of course, but always something comforting, at any hour.

When you can sit down to eat

We seat you for lunch from 11:30 to 14:15, and for dinner from 18:30 to 22:00. Once at the table, nothing rushes you: the house does not close after service, and you stay as long as you wish. In between, the bar stays open.

Eve runs the house. An excellent cook, she watches over everything: nothing escapes her, and she sets the pace of the place with a masterful hand. A remarkable decorator, she is also the one who gave Les Variétés its character by bringing its historic soul back to life — the room you walk through is her work as much as it is 1902's. Romain is here from morning to night: the coffees and breakfasts, the mise en place, the suppliers, the busy services — the higher the challenge, the further he rolls up his sleeves. Théo has run the kitchen for many years. Demanding, uncompromising on the speed of service, master of his Rational oven. Precise, meticulous, never monotonous. Akcyl is here in the evening: the service and the bar, the good nights out. You are shown to your table. Families find a high chair and a children's menu, couples a banquette, business meals the discretion they need — and our waiters keep absolute confidentiality about what is said at the table. Dishes adapt: an intolerance, a diet, a particular need is mentioned when ordering, and the kitchen follows.

Where what we serve comes from

All our meat is French, without exception. Our fish comes from Maison Savia in Saumur — fifty kilometres from here, delivered day by day. A French brasserie that bought elsewhere would no longer quite be a French brasserie.
